Now imagine adding bacon to that awesomeness… Spaghetti aglio olio is originally from southern Italy in Naples and many variations exist, some add chili flakes others with parmesan or pecorino and many include parsley.   1. Prepare 4 slice of bacon.
  2. You need 6 clove of garlic.
  3. You need 2 tbsp of butter.
  4. It's 2 tbsp of live oil.
  5. Prepare 1/2 cup of pasta water.
  6. Prepare 1 tbsp of Chili flake.
  7. Prepare 1 cup of parmesan cheese.
  8. You need Bunch of spaghetti for 2 person.
  9. You need of Garnish with fresh fennel dill.

For this recipe I used Catelli Smart spaghetti. Spaghetti Aglio Olio was my grandmother's favorite pasta dish. She often made it at home, and she always ordered it in the local Italian restaurant she and my grandfather patronized. Whenever I make and eat this dish, I think of her.

Bacon Spaghetti Aglio Olio step by step

  1. Cook pasta then set aside reserving the 1/2 cup of the pasta water.
  2. With little olive oil pan fry the bacon till almost cook for about 4 minutes then drain the oil, add in the chop garlic together with soften butter and cook for another 2 minutes (Low flame do not burn the garlic).
  3. Drain the excess oil and separate the garlic bacon and set aside.
  4. Add in 1 tbsp of the butter oil and add in 1 tbsp of Chili flake and mix well then add half cup of the pasta water and bring it to a simmer then add in the cooked pasta and cooked bacon garlic mix well.
  5. Serve immediately and TOP with some grated Parmesan cheese and some fresh fennel dill or any choice of herbs and enjoy your lunch.
