- You need 1 of Pork Shoulder, butt or leg (5-10 lbs).
- You need of Marinade.
- Prepare 1/2 cup of Olive oil.
- It's 2 envelope of Sazon culantro y achiote.
- You need 2 tbsp of Salt.
- You need 2 tbsp of Fresh cracked pepper.
- Prepare 1/4 cup of Sofrito (see recipe).
- It's 1 tbsp of Cumin.
- It's 1 tsp of Oregano.
- Prepare 5 clove of Garlic.
- Prepare 1 large of Onion.
- Prepare 2 tbsp of Adobo Goya.
Roasted Pork (pernil) instructions
- Make finger sized holes all over pork..
- Place marinade ingredients in food processor until a smooth paste is reached..
- Cover pork in marinade especially inside holes. Cover and refrigerate overnight.
- Next day, remove from refrigerator and let stand room temp for an hour..
- Place in oven , covered, 400°F degrees for 1 hr. Turn pork over and cook 1 hr per pound on 350°F . Remove cover and place skin side up, broil until skin is crunchy. (10-15 min).
