Ingredients of Lucknowi Basket Chaat

  1. It's For of Potato Basket--.
  2. Prepare 3 of medium sized potatoes.

  12. Prepare 1 cup of peas – Boiled.

  14. It's 1/2 cup of Fresh Coriander leaves – Finely Chopped.
  15. It's 1 tsp of Garam Masala.
  16. It's 1 tsp of Dhaniya Powder.
  17. It's as per taste of Salt.
  18. Prepare as per taste of Pepper powder.
  19. It's 2 tbsp of cornflour powder.
  20. You need as required of Oil to fry.
  21. Prepare For of White Peas--.
  22. It's 2 cups of dry white peas – Soaked and Boiled.
  23. You need 1 tsp of salt.
  24. Prepare 1 tsp of Garam Masala powder.
  25. It's 1 tsp of Amchur powder.
  26. Prepare 1 pinch of astoefida.
  27. Prepare For of Meethi Chutney --.
  28. It's 2 cups of Imli water – Soak imli overnight in water and drain in the morning. Save water.
  29. It's 2 of medium sized Jaggery.
  30. You need as per taste of Red chilli powder.
  31. You need 4-5 of dates – finely chopped.
  32. It's 1 tsp of ginger – finely chopped.
  33. Prepare 1 pinch of astoefida.
  34. Prepare 1 tsp of Cumin.
  35. You need as per taste of Salt.
  36. It's 1 tsp of Ghee.
  37. You need For of Green Chutney---.
  38. You need 1 cup of clean and fresh coriander leaves.
  39. It's 1/2 cup of mint leaves.
  40. It's 1 of medium size tomato.
  41. You need as required of Amchur powder.
  42. It's 1 tsp of Jeera powder.
  43. It's as per taste of Salt.
  44. You need few of Green chillies.
  45. You need 1 tsp of Ginger.
  46. It's 1/2 tsp of sugar.
  47. It's 1 of Juice of lemon.
  48. It's 6 of Curd-.
  49. Prepare 1 cup of thick curd.
  50. Prepare 2 tsp of sugar.
  51. It's For of Garnishing-.
  52. You need as required of Pomegranate seeds.
  53. It's as per taste of Red chilli powder.
  54. Prepare 1/2 tsp of Cumin powder.
  55. Prepare as required of Sev.
  56. Prepare as required of Salted boondi.
  57. Prepare some of Coriander leaves.
  58. It's as per taste of Chat Masala.

Lucknowi Basket Chaat instructions

  1. Grate the potatoes well and dip them in chilled water for 20 mins. Till then let’s prepare the chutneys and matar. Green chutney – Mix all the ingredients together and grind well in the grinder. Adjust taste accordingly..
  2. Meethi Chutney – Heat ghee in a pan. Add astoefida, cumid seeds and ginger. Let them warm up. Add imli water and let it simmer on high. Add jaggery and spices. Add dates and let them simmer well for 20 mins. Curd – Mix curd well with sugar. Keep in the fridge. White peas – Take boiled peas. Add the spices. Mix well. Add lemon juice and mix well. Now all the accompaniments of our Basket Chaat are ready..
  3. For Baskets-- Take the grated potatoes and drain the water. Squeeze all the water out of them and spread them in a bowl. Add cornflour, salt and a tsp of oil. Mix really well. Heat oil in the kadhai. Take more oil so that there is no problem in dipping the baskets. Take the big strainer and arrange a portion of potatoes over it. Make sure the layer is not very thick and nor very thin. Arrange it well and put the 2nd strainer upon it. Now the potato layer is between the 2 strainers..
  4. Fry all the baskets with the same process. You can store these baskets for almost a week in a air-tight container..
  5. For Tikkis- I wanted to have a healthy tikki.. Well when it’s fried obviously it’s no more healthy still I tried my best in keeping it nutritious in terms of size, ingredients and oil. I kept the size small so that at-least we can have a control over the portions. Mix all the ingredients of the tikkis very well. Adjust salt accordingly. Mix half of the cornflour in 1/3 cup.
  6. Arrange the Baskets Now all the stuff is ready and it’s time to ponder upon these delightful Indian delicacy. 🙂 It’s sweet and tangy taste will definitely keep you dreaming about it throughout. Take a potato basket. Put 1 or 2 tikkis over it. Spread 1 tbsp of White peas. Spread curd, green chutney. Sprinkle red chilli powder and cumin powder.
